470gheavy cream 2 cups
245gwhole milk 1 cup
150ggranulated sugar ¾ cup
5largeegg yolks
45gCointreau 3 tbsp
30gfresh orange juice 2 tbsp
2tsporange zest
9gvanilla extract 2 tsp
1.5gfine salt ¼ tsp
Instructions
Heat cream, milk, salt, and orange zest until steaming. Cover and steep 20 minutes.
Reheat to steaming.
Whisk yolks and sugar until pale. Temper in two additions.
Cook to 170–175°F. Remove from heat. Stir in Cointreau, orange juice, and vanilla.
Strain, pressing zest firmly. Chill 4 hours or overnight.
