Ingredients

  • 320 g ultrafiltered lactose-free whole milk, Fairlife (1 1/3 cups)
  • 131 g heavy cream (1/2 cup plus 1 tablespoon)
  • 72 g amaretto, Disaronno (1/4 cup plus 1 tablespoon)
  • 66 g granulated sugar (1/4 cup plus 2 tablespoons)
  • 44 g plain roasted almond butter (3 tablespoons)
  • 32 g full-fat block cream cheese (2 tablespoons)
  • 20 g light corn syrup, Karo (1 tablespoon)
  • 15 g dark brown sugar, packed (1 tablespoon)
  • 4 g cornstarch (1 1/2 teaspoons)
  • 2 g vanilla extract (1/2 teaspoon)
  • 1 g fine sea salt (scant 1/4 teaspoon)

Instructions

  • Whisk the cornstarch with 2 tablespoons of the cream to a smooth slurry.
  • Warm the milk until steaming, stir in the slurry, and cook, stirring, until slightly thickened, about 1 minute at a low simmer.
  • Whisk in the almond butter until fully smooth, then whisk a few spoonfuls of the hot mixture into the cream cheese and blend everything back together with the granulated sugar, the dark brown sugar, the corn syrup, vanilla, salt, and the remaining cream. Strain.
  • Chill fully, then stir in the 72 g of amaretto.
  • Pour into one Deluxe pint to the max fill line. Freeze flat and level for 24 hours.
  • Spin on the Ice Cream program. If crumbly, add 1 tablespoon of milk and run a Re-spin.
  • Serve with about 2 tablespoons of almond crunch cereal over each scoop. There is no Mix-In step on this recipe.

Notes

This is an independent reformulation on the cream cheese and cornstarch base, not a scale of the Standard recipe. There is no Mix-In step, since the cereal is a topping rather than a fold-in, which makes this the simplest Creami variant in the library. The Creami adds no overrun, so a 2/3 cup serving weighs noticeably more here than the same measure off the other two machines, which is why the per-serving nutrition runs higher. The cereal topping is not counted below; see the Standard notes. Nutrition is derived from the ICC composition. Do not run the WPRM calculator over these values. Bench spin pending at time of build.
