Mojito Mint Chip

SUMMER · JULY 02, 2026 · WEEK 26

Mojito Mint Chip

A mojito turned into mint chip: spearmint and lime over white rum, cracked through with dark chocolate.

A mojito is mint, lime, sugar, rum, and soda, built tall and cold. Strip out the soda, freeze the rest, and you have the bones of an ice cream that tastes like summer on a porch. The mint here is two kinds doing two jobs: fresh spearmint steeped in the warm dairy for the true mojito character, and a measured amount of peppermint extract for the bright, cooling punch that the words “mint chip” promise. Lime comes in only as zest, never juice, because zest carries all the citrus oil and none of the acid that would split a custard base. The chocolate is stracciatella, thin shards cracked into the churning base so they freeze into brittle ribbons instead of hard chips. Bacardi white rum sits underneath, clean and a little grassy, the way it does in the glass. If you have not cooked with spirits before, our guide to how alcohol behaves in a frozen base, and our alcohol freezing point chart explain why even a small pour of rum changes the texture. This one is sweet, while the bourbon cherry is sour, and it churns up a pale green, the color of real steeped mint rather than food dye.

Why Mojito Works in Ice Cream

The base is a straightforward egg-yolk custard, and that is on purpose: a clean, rich canvas lets the mint and lime read clearly without competing flavors. Steeping fresh spearmint in warm dairy brings out the herbal, slightly sweet side of mint that an extract alone cannot reach, while a small dose of peppermint extract adds a sharp, cooling note. Using lime zest instead of juice is the structural decision that keeps the custard intact, since lime juice is acidic enough to curdle dairy and mute the fat, while the zest delivers aromatic oils with no risk. The sugar sits in the middle of our normal sweetness band, which suits a sweet, classic profile and gives the rum a softer load to carry than it has in a low-sugar base. The chocolate goes in as stracciatella at the end of the churn so it sets into thin, snappable shards rather than freezing into hard chips.

What You’ll Taste

Cool mint first, the spearmint rounder and greener than a candy-cane peppermint, with peppermint extract adding a clean menthol lift. Lime comes next, more aroma than tang, the zest brightening the whole spoonful. Then the chocolate cracks through, thin and bittersweet, a snap of cold cocoa against the soft base. The rum sits at the back, clean and barely warm, more texture than flavor. It is a sweet, balanced, summery ice cream, and the color is a soft, natural green rather than a bright, dyed one. The body is rich from the custard but stays light on the tongue.
